Chicken and Herb Rissoles

Eating healthy doesn't have to blow the budget. Take my 'Chicken and Herb Rissoles' for example. Some simple ingredients with a boost of flavour from the herbs is all it takes. Try including them as a mid-week dinner in your meal planner this week.

Ingredients:
- 500g chicken mince
- 1 tsp olive oil - 1 onion, finely diced
- 1 cup breadcrumbs
- 1 egg, lightly whisked
- 1 tbsp Worcestershire sauce - 2 tbsp fresh chives, chopped
- 2 tbsp fresh parsley, chopped - 1 tbsp dried rosemary
- Garden salad, to serve


Method:
In a large bowl, add mince, onion, breadcrumbs, egg, sauce and herbs. Mix until well combined.
Using clean hands, roll around a spoonful of mixture into a ball. Transfer to plate. Repeat with remaining mince. Place in fridge to firm for 15 minutes.
Then, heat oil in a fry pan over medium heat. Add rissoles to pan, pressing down slightly on each one with spatula to flatten the rissole. Cook for 4-5 minute on each side.
Serve with side salad.
